Cabbage and miso soup

Ingredients
1 small green winter cabbage
4 tbsp olive oil
2 medium onions, finely chopped
1 clove garlic
2 tbsp miso
2 pints stock
2 tbsp chopped savoury
Grated nutmeg

Method

  • Finely chop the cabbage
  • Heat the oil slowly, add the onions and garlic, cover and sweat for 10 minutes
  • Mix in the miso and stock
  • Bring to the boil before adding the savoury, nutmeg and cabbage
  • Cover and simmer gently for 20 minutes
