Chia & Coconut Breakfast Pot

Research shows that chia seeds are a top mood-boosting food, together with pumpkin seeds.

We just started stocking some great grab-n-go Chia Pods, but if you fancy making your own, try this recipe and adapt until your heart is content!

Ingredients

3 tbsp chia seeds
3 tbsp desiccated coconut (optional)
3/4 cup pure full-fat coconut milk (in a tin)
1/2 tsp vanilla powder or 1 tsp vanilla extract
Pinch Himalayan salt
Maple syrup (optional)

Endless optional extras: cinnamon, cacao, berries, stewed fruit, maple syrup

Method

  • Mix all ingredients together and leave to soak for at least an hour and ideally overnight.
