Pina Colada Muffins

This is a wonderful recipe by Bristols own raw foody and nutritionist Melanie Rodriquez of Cook Your Life

Ingredients
1 & 1/2 cups flour gluten gree
1 & 1/2 cups oatmeal
2 cups chopped fresh pineapple.
1/3 coconut water or pineapple juice.deli
1/3 coconut sugar or agave powder.
2 tablespoons baking powder
1/2 teaspoon soda powder
1/3 cup coconut oil
1/2 cup coconut yogurt
2 eggs
1/2 vanilla pod
Pinch of salt

Topping
1/3 cup coconut yogurt
1/2 cup chopped pineapple
1/8 cup poppy seeds
1/3 coconut butter (optional)

Mix all ingredients and put your muffins in the oven.
Every oven is different, 200-150C for about 50 minutes.
Check your muffins every 15/20 minutes.
Enter a knife and when it comes out clean, it is ready to get them out of the oven.
Let them cool, then add the yogurt as decoration.
