Swede and Seville orange soup

Ingredients
12 oz swede
1 oz butter
1 large onion, thinly sliced
1.5 pints stock
Bouquet garni2 pieces of thinly pared Seville rind
Juice of 1 Seville orange

Method

  • Scrub the swede and thinly slice
  • Melt the fat on a low heat and stir in the swede and onion
  • Cover and sweat for 10 minutes
  • Pour in the stock and bring to the boil
  • Add the bouquet garni and orange rind
  • Cover and simmer for 15 minutes
  • Remove rind and bouquet garni
  • Blend, add the orange juice and reheat
