Sweet & Creamy Vegan Mash

A deliciously creamy mash from Honestly Healthy.

Ingredients

380g sweet potato, peeled and cut into evenly sized cubes

1 tbsp coconut oil

1 tbsp nutritional yeast

1 tbsp tahini

3 tbsp water

Juice of 1/2 a lemon

5g chopped parsley

Method

  • Steam the sweet potatoes in a pan for around 10 minutes or until soft.
  • Transfer the sweet potato to a bowl and roughly mash.
  • Stir in the nutritional yeast and coconut oil.
  • In a glass, whisk together your tahini, lemon juice and water until thick and creamy and then stir through the potatoes.
  • Garnish with parsley.
