Dairy/Nut/Seed-Free Tigernut Milk

Ingredients

1 cup/150g tigernuts
4 cups/1 ltr filtered water
1/2 tsp vanilla extract/powder
1/4 tsp cinnamon
Maple syrup/raw honey/sweetener of your choice
Pinch salt

Method

  • Soak the nuts for minimum of 24 hours
  • Blend the nuts in a high powered blender with a little of the soaking water
  • Add the salt, vanilla, cinnamon and sweetener of your choosing
  • Strain, squeezing as much liquid from the pulp as possible

***Tips for using the pulp…

Add to cereal or porridge
Add to smoothies
Mix with dates and seeds to make energy balls
