3 cups (840g) of almond flour
2 teaspoons of bicarb of soda
Pinch sea salt
3 tablespoons of coconut oil (or butter)
4 large bananas
1 cup (280g) of ground seeds e.g. pumpkin, flax and sunflower
3 teaspoons of cinnamon
- Simply mash the bananas in a large mixing bowl with a fork – it does not have to be perfectly smooth
- Add the eggs and whisk with a fork.
- Add the remaining ingredients to the bowl and stir whilst melting the coconut oil in a saucepan.
- Once melted add to the mixture and stir. Place into a silicon or lined loaf tin and bake at 180 C for 30-40 mins.
