
Macrobiotic Rice Salad Recipe
Ingredients
Serves: 3-4 | Time: 25 minutes
- 200g short-grain rice (uncooked)
- 2 Cups cooked sweetcorn
- 1 Cup toasted hazelnuts
- Juice of one lemon
- 3 Tbsp soya sauce
- Parsley
- 2 Diced courgettes
- Freshly ground black pepper
Sometimes we all just want something quick and easy to eat, and this macrobiotic salad is just that. It’s got that flexibility to have as a main meal or a side dish and tastes just as good hot as it does cold.
How to Make the Rice Salad
- Follow cooking instructions for your rice.
- Once cooked, mix the rice with the lemon juice, soy, pepper and parsley.
- Then add the rest of the ingredients.
