Macrobiotic Rice Salad Recipe


Serves: 3-4 | Time: 25 minutes

  • 200g short-grain rice (uncooked)
  • 2 Cups cooked sweetcorn
  • 1 Cup toasted hazelnuts
  • Juice of one lemon
  • 3 Tbsp soya sauce
  • Parsley
  • 2 Diced courgettes
  • Freshly ground black pepper

Sometimes we all just want something quick and easy to eat, and this macrobiotic salad is just that. It’s got that flexibility to have as a main meal or a side dish and tastes just as good hot as it does cold.

How to Make the Rice Salad

  1. Follow cooking instructions for your rice.
  2. Once cooked, mix the rice with the lemon juice, soy, pepper and parsley.
  3. Then add the rest of the ingredients.
