Onion and potato soup

Ingredients
12 oz onion
4oz cooked potato
1 oz butter/4 oz olive oil
1 1/2 pints stock
1 bay leaf
salt & pepper
1 tbsp parmesan
Lemon juice to taste

Method

  • Finely chop the onion
  • Sieve the cooked potato
  • Melt the butter or heat the oil and stir in the onion until golden
  • Take off the heat and add the potato, stock, bay leaf and seasoning
  • Bring to the boil and simmer for 10 minutes
  • Remove the bay leaf and stir in the cheese and lemon juice before serving
