Ingredients
8 oz red lentils
2 tbsp oil
1 onion
1 clove garlic
1 3/4 pt stock
salt & pepper
1/2 tsp coriander
1/2 tsp cumin
1/2 lemon, juiced
3 tbsp rice

Method

  • Saute onion and add garlic
  • Add lentils and stock
  • Season with salt & pepper
  • Add coriander, cumin and lemon juice
  • Bring to the boil and simmer for 40 minutes (until lentils break up)
  • Add rice and more water to desired consistency
  • Simmer until rice is tender
