2 ripe avocados
4 small cooked beetroots
1/2 bag baby spinach leaves / rocket / snow pea shoots
Handful walnuts (optional)
1 heaped teaspoon Viridian organic Soul Food Greens
1 large dessert spoon balsamic vinegar
1 dessert spoon Viridian Ultimate Beauty Oil (or alternative oil of choice)
- Chop the avocado and cooked beetroot into small cubes and arrange on top of the salad leaves. Sprinkle on some chopped walnuts.
- Combine the remaining dressing ingredients in a jar and shake well before pouring over the salad
