Vegan Banana Pancakes Recipe

Ingredients

1 Banana
1 Tsp lemon juice
½ Tsp baking powder
100g Plain flour
250ml Oat milk
1 Tbsp sunflower oil and a bit extra to oil the pan
½ Tsp ground cinnamon
Golden or maple syrup to serve

  1. Mash the banana in a mixing bowl then whisk in the lemon juice, oil and cinnamon.
  2. Next, add the flour and baking powder. Stir while gradually adding your oat milk.
  3. Use some kitchen paper to line your frying pan with a bit of oil, then heat your frying pan on a medium heat.
  4. Pour your batter back into your measuring jug so it’s easy to pour into your frying pan.
  5. When the bubbles pop and pancakes turn from glossy to matt you can flip them over. Cook for another couple of minutes.
  6. Serve with your favourite toppings – we’ve used banana and golden syrup.
