A lovely seasonal winter salad from Primrose Kitchen…
1 cup grated carrot
1 cup of finely shredded red cabbage
½ cup finely sliced red pepper
¼ cup fresh coriander finely chopped
½ cup raisins
½ teaspoon of finely chopped fresh chilli (optional)
¼ cup organic Primrose Kitchen raw almond and chia butter
2 tablespoons lime juice
1 teaspoon maple syrup
1 teaspoon tamari
- Combine all the salad ingredients, mixing well.
- For the dressing, gently heat the maple syrup and almond and chia butter, until runny, allow to cool before adding the lime juice – the dressing should be a thick, just pouring consistency- if needed a teaspoon of water can be added to loosen it.
- Add dressing to all other ingredients and mix well together.
