Here's a delicious vegan pancake recipe for your next Pancake Day (or Shrove Tuesday). And the best thing about it? You can top it with all your favourite toppings to make it your own.

1 tbsp vegetable oil for cooking 400ml oat milk (or your favourite plant-based alternative) 1 tsp baking powder 300g self-raising flour 1 tbsp sugar (any kind) 1 tbsp vanilla extract
Top with bananas, maple syrup and any fruit you can get your hands on.
TIP: keep your pankcakes warm in a low temp oven while you cook the full batch.

Add your baking powder, flour, vanilla extract, sugar and a pinch of salt to a bowl and use a whisk to mix together. Slowly pour in your plant-based milk and mix together until it's becomes a thick batter.

Grab a non-stick frying pan, add a little of the oil over a medium-low heat. Spoon 2 tbsp of the batter into the pan and cook for 3-4 minutes until bubble appear on the surface. Flip the pankcake over and cook for another 2-3 minutes until golden on either side. Serve with your fave toppings.
