Here's a delicious plant-based pancake recipe for your next Pancake Day. And the best thing about it? You can top it with all your favourite toppings to make it your own. Check out this super simple Gluten Free Pancake Mix for an even easier method. Enjoy!

Ingredients Method

1 tbsp vegetable oil for cooking
400ml plant-based milk of choice
1 tsp baking powder
300g self-raising flour
1 tbsp sugar (any kind)
1 tbsp vanilla extract

Top with bananas, berries, maple syrup and anything else that takes your fancy.

TIP: Keep your pancakes warm in a low temperature oven whilst you cook the full batch.

  1. Add your baking powder, flour, vanilla extract, sugar and a pinch of salt to a bowl and use a whisk to mix together. Slowly pour in your plant-based milk and mix together until it's becomes a thick batter.

  2. Grab a non-stick frying pan, add a little of the oil over a medium-low heat. Spoon 2 tbsp of the batter into the pan and cook for 3-4 minutes until bubble appear on the surface. Flip the pancake over and cook for another 2-3 minutes until golden on either side. Serve with your favourite toppings.
